The last time I was this concerned about coming down with a debilitating health condition was in October 2018 when I missed two menstrual periods and felt certain I was pregnant. Maybe I was or maybe it was the hormonal part of me speaking. Either way for a few weeks I was concerned about getting hyperemesis gravidarum again. I’ve had this rare prenatal condition (affects 1% pregnant women) three times …. each time was pure hell.
Up until my oldest started kindergarten, he had limited exposure to refined sugar. We were an organic, homemade kind of family that consciously avoided sugar, artificial colors, gluten, and pasteurized dairy.
Most of our friends ate how we did and if we went somewhere serving food we couldn’t eat, I checked beforehand to see what we could bring. No matter what food we ate, or didn’t eat, I think its important to feel included; especially for kids.
Today, I found out I have Candida, a.k.a. yeast overgrowth. I’m not to surprised seeing that I have all the symptoms (i.e. cravings, vaginal yeast infections) and the fact it was my idea to ask my Naturopath for test. “Aren’t I going through enough already?” I ask myself. I recently initiated a difficult divorce, started a graduate program, and both my boys start a new school this week.
Most coconut flour cookies taste like cardboard and so I was reluctant to create a recipe for one. Yet one day I did and am pleasantly surprised at how they turned out …. they roll out like a dream and are as moist as I could get without the dough falling apart.
