Lazy Guy Mayo

This is my husband’s take on mayonnaise. Before he walked in my life I’d been making my own version of mayo with little to no success; was either too runny or too bland. Into my kitchen he came, blending the perfect concoction of what you will find below.

We go through a jar a week slathering atop amaranth tortillas or chunks of roasted meat. My youngest dollops it on everything in the fridge and I’m a sucker for using it in deviled eggs. Any artichoke fans out there? Mix this mayo with pesto for a sauce that’ll bathe your heart! Or toss with blanched cabbage for an easily digestable slaw. Don’t eat egg? Try almond mayo.

Lazy Guy Mayo

Ingredients

2 eggs, pasture-raised

2 Tbsp. mustard (we like Eden Foods)

1/2 tsp. sea salt

1 to 1 1/2 cups olive oil

Method

  1. Put eggs, mustard, and sea salt into the blender and blend together.
  2. Slowly increase speed while add oil in drizzle fashion ~ nice ‘n slow.
  3. Increase speed to high, wait for ingredients to be thick ‘n creamy.
  4. Done when hole forms in middle and things no longer move about. 

Tips and tricks

  • I use a VitaMix. Adjust speed if using a different blender, alternatively I’ve been told ‘wand blenders’ work beautifully with a tall measuring cup or Mason jar. Clean up is easier too 😉 
  • Substitute other oils if you don’t tolerate/like olive oil. I tried avocado oil, doesn’t work well. I’ve used flax oil too and that works but expensive!
  • Parsley mayo…add a handful and watch a pale green color light up your senses!
  • A trick I learned from Sally Fallon … add a tablespoon of whey and leave covered jar of mayo at room temp for 7 hours before refrigerating. This boosts nutrients and adds valuable enzymes to aid digestion of fats. Also keeps mayo fresh for several months. Without whey, mayo keeps 2 weeks.
  • Make gravy … add 2 Tbsp. mayo to 1 cup of meat stock, heat gently for couple minutes, stirring constantly.
