Pumpkin Pie (stage 2) for The Body Ecology Diet

I made pumpkin pie for my son’s 10th birthday party and our 25 friends that came to celebrate him. In true ‘Tara style’, I made five different pies to experiment with; all from different recipes and came up with a couple recipes of my own that are not only ‘body ecology friendly’ but perfectly suitable for any body with any eating style. 

This pie is delicate with enough richness to satisfy most any sweet tooth. As with most of my recipes, this is free of refined sugar and common allergens; except nuts, and is especially made for those who practice The Body Ecology Diet (B.E.D.); you’ll find this to be stage 2 friendly as an occasional treat. Coconut Roll-Out Cookies for The Body Ecology Diet

Most coconut flour cookies taste like cardboard and so I was reluctant to create a recipe for one. Yet one day I did and am pleasantly surprised at how they turned out …. they roll out like a dream and are as moist as I could get without the dough falling apart.

This all around versatile cookie is great for anyone healing on The Body Ecology Diet (B.E.D.) and need to avoid grain, refined sugar, and flour. If you are unable to eat eggs, check out my almond cookies.

Orange Chocolate Torte: Recipe for B.E.D.

chocolate orange torteI created this recipe for a Kentucky Derby event I catered awhile back for a client who was practicing a way of eating, called The Body Ecology Diet (B.E.D). There were going to be many people at this event and my client asked me to make a dessert that everyone could enjoy; including her.

I set about the task of creating this recipe …. a chocolate torte with a touch of orange …. and one that would be delicious for all while still being B.E.D.-friendly. Excellent, one of my favorite things to do!
