When you eat unsalted, cultured food, the probiotics that are inside them go into gut/inner ecosystem and set up shop. Once there, they make babies, grow in #’s, and build mini cities the size of NYC in a matter of hours. No joke. Once they settle in your gut lining they are in a strong position to support you in various beneficial ways.

…. and why most people eat them, is they nourish the good flora living in your gut and help to prevent bad gut flora (i.e. yeast overgrowth) from multiplying and causing you health issues, like GBS+ during pregnancy or a vaginal yeast infection which is never any fun.
The aim of the game is to make sure the good flora living in your gut outnumber the bad flora that also naturally live in there.
This is where the good flora in unsalted, cultured food enter into the mix. They are fantastic at getting into all the nicks and folds of your gut lining and work to prevent pathogens living there from overpopulating and forming harmful toxins.
