Most coconut flour cookies taste like cardboard and so I was reluctant to create a recipe for one. Yet one day I did and am pleasantly surprised at how they turned out …. they roll out like a dream and are as moist as I could get without the dough falling apart.
This all around versatile cookie is great for anyone healing on The Body Ecology Diet (B.E.D.) and need to avoid grain, refined sugar, and flour. If you are unable to eat eggs, check out my almond cookies.
I used vegetable glycerine for a sweetener as it doesn’t feed excess harmful yeast, bacteria, or viruses (i.e. Candida, GBS+) living in the body. This sugar substitute comes in especially handy if you have diabetes as glycerine has no influence on blood sugar or insulin release.
This fun treat is for kids of all ages to cut into shapes and even decorate with one of the frostings below 💞
Coconut Roll-Out Cookies
Prep time: 15 min // Cook time: 5-10 min
Makes: 1 dozen
- 1 cup coconut flour*
- 3 eggs
- 1/3 cup ghee or coconut oil, melted
- 1/4 cup vegetable glycerine
- 3 Tbsp coconut milk (or another milk)*
- 1 tsp vanilla or almond extract (alcohol-free)
- 1/2 tsp sea salt
- Combine coconut flour, salt,.
- Mix oil, sweetener and almond extract in a small bowl.
- Mix wet and dry ingredients.
- Place dough in fridge for 1 hour.
- Roll dough between two pieces of wax paper, 1/4-inch thick.
- Remove top piece of wax paper and sprinkle dough with a bit of coconut flour.
- Cut cookies into shapes.
- Place shapes on parchment-lined cookie sheet with metal spatula.
- Bake at 350 degrees until edges are light brown, 8-12 minutes.
- Cool before handling or they will break.
Tips & Tricks
- Use ghee or cultured butter instead of the coconut oil.
- I never tried, but you might be able to substitute another thick milk for coconut milk.
- If you tolerate honey, swap 1/4 cup honey for the glycerine.
- This is a friendly recipe for those on a Paleo, B.E.D*, or GAPS.
- Another cookie recipe while healing is almond roll out cookies (egg-free)
- These cookies are easy-to-digest and combine fairly well with animal protein.
- Frost with my flax frosting or basic white frosting (free of gluten, dairy, refined sugar).
*If you’re on the early stage of Body Ecology Diet, you may want to culture the coconut flour and milk to introduce enzymes and probiotics. This extra step will make this recipe easier to digest. If you don’t do this, then make this an occasional or transitional treat.
