Thanksgiving Gravy ~ Starch-Free & B.E.D. Friendly

Slather this savory, starch-free gravy over meat, mashed red potatoes, or starch-free stuffing for a traditional comfort food and a happy belly. Unlike most gravy, this one does not contain a thickening starch like cornstarch or flour and so it combines well with animal protein.

When I say ‘combines well’ I’m referring to food combining; a secret for improving digestive issues. I learned about this on Body Ecology Diet (B.E.D.) and glad I did as I no longer feel stuffed to the seams after I feast, which is a great feeling. If you have moved on to stage 2, this onion gravy is a goodie. 



3 Tbs. coconut oil, ghee, or butter if tolerated

1 1/2 cups leftover pan drippings from turkey, chicken, etc.

1 1/2 cups meat/vegetable stock (or shiitake soaking water in stuffing recipe)

2-3 Tbs. grass-fed gelatin

Sea salt to taste


Add drippings, broth, and sea salt to a medium-sized pan and bring to a gentle simmer.

Reduce heat and simmer 20 minutes, stirring often.

Dissolve gelatin in cold water and let sit for one minute.

Pour dissolved gelatin into saucepan at teaspoon increments until the gravy begins to thicken

Stir in your choice of fat.

Allow to cool a bit before serving; it’ll thicken up a bit as it does.
