Roll-Out Cookies: Recipe for The Body Ecology Diet

I think that most coconut flour cookies taste like cardboard, so I was reluctant to create a recipe for one. After a few takes though, I was pleasantly surprised at how these turned out. They roll out like a dream and are as moist as I could get without the dough falling apart.

I made this recipe for those on Body Ecology Diet (B.E.D.) healing a yeast or bacterial overgrowth related health issue, like Candida or GBS+. Overall, this is a great cookie that is grain-free, ‘sugar-free’, and dairy-free. Can’t eat eggs? Try my almond roll-out cookies.

I use vegetable glycerine in this recipe, which is a sweetener that does not feed harmful yeast or bacteria living in the body; making it a good sugar substitute for those on B.E.D. or with a diabetic condition. In short, glycerine does not influence blood sugar or insulin release. 

These are a fun treat for kids on B.E.D. to decorate for Easter, Valentine’s, or Christmas 💞


Prep time: 15 min // Cook time: 5-10 min

Makes: 1 dozen


  • 1 cup coconut flour*
  • 3 eggs
  • 1/3 cup ghee or coconut oil, melted
  • 1/4 cup vegetable glycerine
  • 3 Tbsp coconut milk (or another milk)*
  • 1 tsp vanilla or almond extract (alcohol-free)
  • 1/2 tsp sea salt


  • Combine coconut flour, salt,.
  • Mix oil, sweetener and almond extract in a small bowl.
  • Mix wet and dry ingredients.
  • Place dough in fridge for 1 hour.
  • Roll dough between two pieces of wax paper, 1/4-inch thick.
  • Remove top piece of wax paper and sprinkle dough with some almond flour.
  • Cut cookies into shapes.
  • Place shapes on parchment-lined cookie sheet with metal spatula.
  • Bake at 350 degrees until edges are light brown, 8-12 minutes.
  • Cool before handling or they will break.

Tips & Tricks

  • Use ghee or cultured butter instead of the coconut oil.
  • I’ve never tried, but you might be able to substitute another thick milk for coconut milk. 
  • If you tolerate honey, swap 1/4 cup honey for the glycerine.
  • This is a friendly recipe for those on a Paleo, B.E.D*, or GAPS.
  • These cookies are easy-to-digest and combine fairly well with animal protein.
  • Frost with my flax frosting or basic white frosting (free of gluten, dairy, refined sugar).

*If you’re on the early stage of Body Ecology Diet or another gut-healing diet, you may want to culture the coconut flour and milk to introduce enzymes and probiotics which make this recipe easier to digest. If you skip this step, then make this an occasional or transitional treat.

    Technically, no it would not be as coconut manna is pureed mature coconut and unless fermented would not be allowed on stage 1 of B.E.D. Straight up coconut oil is fine though. That said, a serving size of manna contains just 1 gram of sugar so unless your kids have a hard time digesting fat I would give it a go and limit intake; watching for symptoms of skin rashes, etc. When my kids were on the initial stage of the diet, I created almond hearts which are yummy sort of fat bomb made with coconut oil 🙂 Recipe at

    Is coconut manna/butter allowed on stage 1? £ was go to make fat bombs for my kids.

    Hi Ashlee, this recipe uses a liquid glycerin only. I am sure you can use lakanto though you might need to fix the dry to wet ratios if you do. Let us know if you play with things 🙂
